is just one of the many food farming companies which belongs to the IGP Ruling Council of Cecina de León ("Cured meat of Leon").
The main activities of the Regulating Council are the defense of the I.G.P. (PROTECTED GEOGRAPHIC INDICATION) , "Cured meat of Leon" (Cecina de León), the enforcement of its regulations, monitoring the fulfillment of the same one, as well as promotion and quality control of the protected product.

It´s a meat with a characteristic flavour, lightly salted and with a little fibrous consistency.
The pieces are presented as a whole or in portions and slices vacuum-packed.
When the fresh piece arrives to the factory, if the weight, fat and other essential requirements from the Ruling Council are met, we place in the numbered red label together with the I.G.P. (PROTECTED GEOGRAPHIC INDICATION).
In this way, every piece is identified individually and can be perfectly controlled at all times after processing.

After a minimum time of seven months, required by the whole manufacturing process, we place in the certified numbered guarantee label once it has passed the organoleptyc and physical-chemical controls carried out by the Regulating Council. This label guarantees the quality of that piece. If this product is put in the market in portions or in slices vacuum-packed, the quality label will be visible in the packing, altogether with a reference which will allow anybody to know from which piece those portions or slices come from.

There are 4 types of pieces
, obtained from the hind quarters of cattle with a weight of more than 400Kg.:
Tapa (center leg): fat beef with a conical shape, but flat towards the center sides. The minimum weight that this piece must have in order to be used in the manufacturing of cecina de León must be 8 Kg.
Contra (round): made up of the round and the rump, formed by the round, with a triangular prism shape. The minimum weight must be 10 kg.
Babilla (stifle): egg shape piece of the thigh. The minimum weight must be 7 kg.

Cadera (sirloin): triangular shape. The mimimum weight must be 6 kg.

These pieces of cecina in blood must have, besides the minimum weight, a fat thickness of at least 0,5 centimetres and adequate organoleptycal characteristics.
